Zucchini Slice

Cook Time: 30-45 minutes

Ingredients:
- 400g (1 cup) zucchini
- 200g ham or fried diced bacon
- 1 cup cheddar cheese
- ¼ cup parmesan cheese
- ½ cup chopped chives (or 1 tbsp dried chives)
- 5 eggs
- 1 cup Waltanna Foods Gluten Free Self Raising Flour
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp white pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
Method:
- Preheat oven to 190°C fan forced / 200°C conventional
- Whisk eggs and oil together
- Combine zucchini and chives into mixture
- In a separate bowl mix flour and spices
- Add cheeses to flour mix
- Pour wet into dry and whisk thoroughly until combined
- Grease baking dish and pour slice mixture onto the tray
- Option 2: Grease mini muffin trays and bake as mini zucchini muffins
- Bake until golden brown on top and skewer comes out clean ~ 30-45 minutes
