Waltanna ANZAC Biscuits

Serves: approx.. 12 biscuits
Ingredients:
- 200 g (1.6 cups) plain flour
- 50 g (3.3 tablespoons) Waltanna Foods Golden Flaxseed Meal
- 40 g (2.6 tablespoons) Waltanna Foods Golden Rolled Flaxseed
- 1 cup rolled oats (Our favourite are Red Tractor Oats which are grown here at Waltanna Farms)
- 1 cup desiccated coconut
- ¾ cup brown sugar
- 125 g (approx. 1/2 a cup) butter
- 2 tbls golden syrup
- 2 tbls water
- 1 tsp bicarbonate soda
Method:
- Preheat oven to 160°C (convection) / 170°C (fan forced)
- Sift plain flour into a large bowl and stir in oats, coconut, Waltanna Foods Golden Flaxseed Meal, Waltanna Foods Golden Rolled Flaxseed and brown sugar.
- In a separate small bowl, mix water and bicarbonate soda.
- Place butter and golden syrup into a saucepan on low heat and stir until combined. Add the small bowl of pre-mixed water/bicarbonate liquid being careful not to overflow saucepan.
- Pour saucepan mixture onto the dry ingredients and mix well.
- Roll into balls (approx. 12) and space evenly on a lined baking tray.
- Bake in oven for 10-12 minutes for soft biscuits and 12-15 minutes for crunchy biscuits.
