Muesli Bars

Serves: 20 (50g/serve)
Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup raw almonds, walnuts, pecans (roughly chopped)
- 1 cup packed dates (pitted // deglet noor or medjool) or dried apricots
- 2 Tbsp sunflower seeds (roasted or raw)
- 2 Tbsp Waltanna Foods Brown Flaxseeds
- 2 Tbsp Waltanna Foods Golden Flaxseed Meal
- 2 Tbsp hemp seeds
- 1/4 cup agave nectar, honey, golden syrup or maple syrup
- 1/4 cup sunflower seed butter, creamy salted natural peanut butter, or almond butter
- 3 Tbsp Spoons Waltanna Foods Pure Golden Flaxseed Oil
Optional:
- 2 Tbsp Coconut chips
- 2 Tbsp Chia Seeds
- 2 Tbsp Cacoa Nibs
- 1 Tsp Cinnamon powder, 1 Tsp Ginger Powder, 1 Tsp All Spice Powder
Method:
- Preheat oven to 175°C fan forced (185°C convection)
- Mix together oats, nuts, sunflower seeds, Waltanna Foods Brown Flaxseeds, Waltanna Foods Golden Flaxseed Meal & hemp seeds on a baking tray lined with parchment paper.
- Toast in the oven for 10-13 minutes until slightly golden.
- Process dates in a food processor (about 1 minute). It should form a dough like consistency.
- Place toasted oats and dates in a bowl and set aside.
- Warm honey and peanut butter slowly on the stove.
- Pour over oats and mix in, breaking up the dates to disperse.
- Transfer to a tray lined with parchment paper.
- Spread evenly across parchment paper.
- Cover with parchment paper and press down with something flat/hard such as a glass.
- Chill in the refrigerator or freezer for 15-20 minutes to harden.
- Cut into approximately 10 bars. Bars can be kept in an airtight container for a few days or can be kept in the freezer to keep them fresh.
