Quiche with flaxseed and almond crust
Preparation Time: 20 minutes
Cook Time: 20-25 minutes
Serves: 4-6 people
Ingredients:
Crust -
- Olive oil/butter for greasing pie dish
- 1 1/3 C almond meal
- ¼ C Waltanna Foods Golden Flaxseed Meal
- 2 Tblspn olive oil
- 2 Tbl Spn milk/plant based milk
- 1 Tspn dried oregano/ (optional: Flax sprinkle)
- ½ Tsp Salt
Quiche Filling -
- 1 C chopped Kale/ 1 medium zucchini
- ¼ C bell peppers/ tinned corn
- Pinch of salt
- 3 Tbl Spn Onion
- 1/3 C tasty cheese
- 3 Tbl Spn parmesan cheese
- 3 large eggs whisked
- ¼ C milk
- 1 tsp dried thyme
- ½ Tsp Salt
- Cracked black pepper to taste
Method:
- Preheat oven to 190°C.
- Saute kale and onion with butter for 5 minutes.
- Prepare crust: whisk all dry ingredients until lump free.
- Add oil and milk and mix all crust ingredients until a crumbly dough forms.
- Spread and flatten dough on the bottom and up sides of the pie dish.
- Add vegetables to the bottom of the pie dish
- Whisk eggs and milk together and add cheese
- Pour egg mixture into the pie dish.
- Add cracked black pepper
- Bake for 20-25 minutes.
