Banana Bread
Preparation Time: 20 minutes
Cook Time: 45-60 minutes
Serves: 8
Ingredients:
- 1 ¾ cup Waltanna Foods Gluten Free Self-Raising Flour
- 1 tsp Cinnamon
- 2/3 cup Brown Sugar
- 1 tbl spn Honey
- 1 tbl spn Vanilla Essence
- ¼ cup Waltanna Foods Flaxseed Oil
- 1 tbl spn Waltanna Foods Flaxseed Meal
- 2 medium overripe Bananas
- 2 eggs
- ½ cup Oat milk/ Milk
- 50g butter, melted, cooled
Method:
- Preheat Oven to 180°C (Conventional)/ 160°C (Fan).
- Grease 2 cake pans with butter, then line the base with baking paper.
- Sift gluten free self-raising flour and cinnamon into a large bowl. Stir in sugar and make a well in the centre.
- Mash banana in a bowl. Add eggs, milk, flaxseed oil, flaxseed meal, honey and melted butter and stir until well combined.
- Bake for 45-60 minutes until a wooden skewer inserted into the center comes out clean.
- Cool for 10 minutes and turn onto a wire rack upside down.
- Cool completely before frosting.
